Comfort Food from the Sea
Get in the Galley with Chef Dez as he demonstrates some of the most delicious seafood comfort recipes. Tonight we will make scrumptious spicy seaside stew served with soda bread, whitefish with a decadent sundried tomato butter sauce, and his tasty version of clam chowder which combines the best of New York red and Boston white clam chowders. Easy Rustic Soups and Crusty Italian Bread
To help you prepare for the cold upcoming winter months, Chef Dez will show you how easy it is to create flavourful soups and crusty bread from scratch. Tonight we will make oven roasted tomato soup garnished with homemade croutons, and favourful Italian minestrone, and also show you how to make crusty Italian bread from scratch that requires no kneading! This bread is amazing and is as beautiful as ones you would pay $5 for at a specialty bakery… and because it requires no kneading, you won’t believe how easy this is! Pasta from Scratch
Come and learn how to make pasta dough from scratch and turn it into stuffed tortellini and ravioli — you won’t believe how fun and economical it can be. This class is completely hands-on. Everyone will make their own batch of dough and fi lling. Bring a container large enough to take home their creations in, and cooler to place this container in.

Foodsafe Level I
In this course you will learn food handling, sanitation and work safety for frontline food service workers such as cooks, servers, bussers, dishwashers, and deli workers. This course is designed for foodservice owners, managers, kitchen managers, executive chefs, and others who are responsible for managing for food safety in foodservice establishments. MarketSafe certification
MarketSafe is a food safety training program for farmers and producers who make, bake or grow products to sell at local farmers’ markets, farm gates or other types of temporary food markets. MarketSafe was developed by the BC FOODSAFE Secretariat in partnership with the BC Association of Farmers’ Markets, and is supported by the Regional Health Authorities, the BC Centre for Disease Control, and the BC Ministry of Agriculture.
